The Story
A takeaway-only bakery down Drewery Lane, off Little Lonsdale Street, founded as the kitchen that supplies Little Rogue a few doors up. The baking blends French technique with Japanese and Korean ideas: a croissant laminated over three days with Isigny butter, a twice-baked yuzu and almond croissant, shio pan, shokupan that lands at midday, and a garlic cream-cheese bread that sells out. Pastries sit in dark timber boxes modelled on the medicine cabinets from My Neighbour Totoro, and the coffee is Small Batch.
